random thoughts and a cookie recipe

Look at that! Eight nights!

Last night was the last night of Hanukkah. We lit the candles for the last time. It's kind of sad that it's over now. But I had a very wonderful first Hanukkah. I'm looking forward to many more!

In other news, I feel like a miserable panda. I have cramps. They hurt. It sucks. A lot.

The boyfriend went to the grocery store and got all the fixin's to make chicken soup. I'm so happy that I have found a wonderful man who is a wonderful cook and who, most importantly, loves to cook for me. In turn, I bake.

Speaking of baking, I made oatmeal chocolate chip cookies last week for Samara as a thank you for letting us stay with her in NYC. They were pretty great.

Oatmeal Chocolate Chip Cookies
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 t vanilla extract
1 1/4 cups of all purpose flour
1/2 t baking soda
1 t salt
3 cups quick cooking oats
1 cup semisweet chocolate chips

Preheat oven to 325 degrees
In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking soda and salt; stir into the cream mixture until just blended. Mix in the oats and chocolate chips. Drop heaping spoonfuls onto ungreased baking sheets.
Bake for 12 minutes. Allow cookies to cool, and then enjoy!

No pictures. But trust me, they're delicious.
