lemon-y goodness

Today, in between editing tips and posting content, I made a lemon loaf (I also did laundry and cleaned the floors...aren't I productive?). The boyfriend has told me many times about how he loves his mother's lemon loaf and that one day he wants his wedding cake to be a lemon loaf. I think he's kidding about the last part. I hope he's kidding.


Anywho, I decided it was high time for me to make my own. It was easy peasy lemon squeezy (get it? Hardeeharhar.). Ahhh I crack myself up sometimes. Oh, you want me to stop cracking jokes and just give you the recipe? Alright. Here ya go.

Lemon Loaf (from Eat Live Run)

2 1/2 cup flour
1/2 t salt
1 1/2 t baking powder
1 1/4 cup sugar
2 sticks butter, softened
3 eggs
3/4 cup milk
zest and juice of 1 lemon

Preheat oven to 325 degrees.

Combine flour, salt and baking powder in a large bowl, and set aside. Cream together the sugar and the butter until light and fluffy (approx. 5 minutes). Add the eggs, one by one, beating well after each addition. Add the dry ingredients, milk and then lemon juice and zest while continuing to beat smooth.

Pour batter into a buttered and floured loaf pan, and smooth the top.


Bake for 1 hour and 15 minutes or until the top is golden brown and sides pull away from the pan. Let cool in pan for 10 minutes before turning out onto a cooling rack or large plate. Then add the...

Lemon glaze

juice of 1 lemon
1  T powdered sugar

Mix the two together and drizzle over the cake.
