friday friday friday!

It's Friday! And as much as I want to break into song (a la Rebecca Black...haha just kidding. She's awful.), I won't do that to you. Mostly because I suck at singing. But I will give you a recipe because we have friends coming over for dinner tonight, and this is what I'm contributing (and a lemon loaf). And the knowledge that I'm going to Tequila Rain this weekend, so be prepared for some seriously awesome stories...or at least some very substantial contributions to the "awkward" side of my Thursday post :)

Ok, onto the recipe.

Blueberry Crisp (from Eat Live Run)

4 cups blueberries
juice of 1 lemon
3/4 cup brown sugar
1/2 cup flour
1/2 t cinnamon
1/2 stick cold butter, cut into tiny pieces
3/4 cup old fashioned oats

Preheat oven to 375 degrees, and spray shallow pan (ex: 9x15" pan) with cooking spray. Spread the berries evenly along the bottom of the pan and sprinkle lemon juice on top.

In a large bowl, combine the rest of the ingredients and use your hands to work in the butter. In the end, you should have tiny pieces of butter throughout. Chunks are a good thing! Spread the streusel on top of the blueberries and bake for about 25 minutes. Best served warm.

    This looks AMAZING! Woah. You know what else is great to do with blueberries? Freeze em and then let them melt in your mouth. Perfect spring time treat.
