quesadilla, pizza, same thing

The other day, I was dead set on making these shrimp and goat cheese quesadillas from Eat, Live, Run. Like, went to the grocery store and got the soft tortillas, grabbed the goat cheese crumbles, got a bomb dot com Mexican shredded cheese mixture. And then I went to look at shrimp, and suddenly I lost inspiration. Shrimp's kind of expensive. And I was not in the mood to be spending that much. So I went on my merry way with my cheese and tortillas.

And I got home and realized I had all this cheese and hella lot of soft tortillas, and nothing to say about it. But then I put my thinking cap on. And I made pizza. Bam. Check it out.

Goat cheese bbq thin crust pizza

serves 1
1 flour tortilla
about 2 T olive oil
bbq sauce (of your choice)
about 3/4 cup shredded cheese (i used my mexican mix...but pepperjack would be awesomesauce too)
about 1/4 cup crumbled goat cheese



Pre-heat oven to 350 degrees. Place flour tortilla on un-greased baking sheet, drizzle olive oil and spread over tortilla. Pour however much sauce makes your heart pitter patter. I used a little bit so I could let the cheese shine.

Spread shredded cheese over top, and then goat cheese. Bake in oven for approximately 10-12 minutes, or until cheese is melted. Cut into fourths, enjoy!

Easy as pie. But as soon as I see shrimp on sale somewhere, my butt is most certainly heading straight to the store to buy it and make those quesadillas. Because they look DELICIOUS.

And what's a food post without an animal video? Actually...don't answer that because I am well aware that the two are entirely unrelated. But check out the slow loris...WITH AN UMBRELLA. Boom. Mind blown.


please don't ask me what a slow loris is. because i have no idea. it's just adorable.
