bread baking good times

Today I did not plan on baking. I had planned to bake brownies tomorrow. But then I stumbled across a bread recipe. And it included maple syrup. And bananas. Both of which I happened to have handy. I couldn't not bake this bread. So, here it is.

Maple Banana Bread (adapted from here)
ingredients.
1 1/3 cup all-purpose flour
1 t baking soda
1/2 t baking powder
pinch of salt
1 stick butter, melted
2/3 cup maple syrup, room temperature
2 eggs, room temperature
3 mashed bananas
3 T milk (or if your like me and don't have milk because you're lactose intolerant, soy milk)


Preheat oven to 350 degrees. Combine flour, baking soda, baking powder and salt in a bowl. In another bowl, combine melted butter and maple syrup until well-combined. Add in eggs, one at a time, beating well after each addition. Add in bananas and then milk. Pour wet mixture into dry ingredients and fold in. Don't over-mix! It should still be a little lumpy.
Pour into greased loaf pan. You can add a topping if you so choose. I added brown sugar, cinnamon sugar and some slow-cooking oats.
Bake for 35-40 minutes or until top begins to split and the sides begin to pull away from the pan. Whatever you do, don't overcook it. You'll deeply regret it.

I have quite the busy weekend planned, from 90s night tonight to a Pure Barre class tomorrow morning to Easter dinner Sunday. Busy bee.
