earthy crunchy

Things I did today (in no particular order):
  • Cleaned the apartment (including the bathroom...ugh)
  • Laundry
  • Painted my toes mint green in preparation for vacationnnnnnnn
  • Made a lemon loaf with a hint of orange zest (because it still hasn't gotten old)
  • Did my actual work for...you know...work
  • Made Elvis Granola
What is Elvis Granola, you ask? Only the best stuff this side of ever. It has chocolate and peanut butter in it, which makes it especially awesome. And it's super simple. Here you go!

Elvis Granola (adapted from Eat, Live, Run)


1/4 cup canola oil
1/3 cup maple syrup
1/4 cup chunky peanut butter
1/2 t salt
1 t cinnamon
4 cups old fashioned oats
1/2 cup dry roasted peanuts
1/2 cup sunflower kernels
2/3 cup chocolate chunks (you can chop it yourself or buy it pre-chopped like lazy-bones me)


Preheat oven to 225 degrees. Combine canola oil, maple syrup, peanut butter, salt and cinnamon in a pot and bring to a simmer. Allow to cook for approximately 3-5 minutes.
While cooking, combine oats, peanuts and sunflower kernels in a bowl. Pour the hot syrup over the oats and toss with rubber spatula to coat. Spread granola over two lined baking sheets and bake for 40 minutes, mixing occasionally and turning trays halfway through. Allow granola to completely cool before adding chocolate. Enjoy!

I made this to snack on during the flight and during the week, but hopefully it makes it to there. I mean, it makes about a pound of granola. That's a lot. And it keeps for about a month in a sealed container kept in the fridge. Badam. Granola.

Tomorrow we leave for Florida. I can't believe it's finally here. I've been waiting for this for what feels like forever. Gah. I've seriously been lacking in the vitamin D department.

And the boyfriend just brought me home some vegan chocolate chip cookies from Whole Foods. Baby Jesus. These things are DELICIOUS. Now I'm starting to think being a vegan wouldn't be all that bad...

  2. That granola sounds yummy! I've been wanting to make my own and with the pb in it - I'm pretty sure my pb-obsessed hubs will be all for it!
