blondies

Blondies, my friends, are far superior to cookies. Why? Because they've got a little more oomph than cookies do. They let you know, "I'm here. And I'm delicious. And you will love me." And love them I do.
Chocolate Chip Peanut Butter Swirl Blondies (from Eat, Live, Run)

1 stick butter
1 cup packed dark brown sugar
1 egg
1/2 t salt
1 t vanilla extract
1 cup flour
1/3 cup creamy peanut butter
1/2 cup chocolate chips

Preheat oven to 350 degrees and butter an 8 inch square pan.

Brown your butter over medium heat. The best way to brown butter is to let it melt in a sauce pan, and then continuously swirl your pan so that the butter is constantly moving. This way you don't end up with burnt butter. Gross. You want your butter to be a nice caramel color. Once you get there, immediately pour the butter into the mixing bowl of your Kitchen Aid. Add in the brown sugar and mix until smooth. Add your egg, beat again.

Then add the salt, vanilla and flour and beat until combined. Add in the peanut butter and combine so it's swirled. Fold in the chocolate chips.
Pour mixture into prepared pan, and bake for 25 minutes or until the edges start to pull away from the sides of the pan.
Let cool before slicing into squares. Try not to eat your hand in the mean time.

  1. Those look delicious! I'm a sucker for anything sugar-related! One problem-o, I'm allergic to peanut butter :( But thankfully I found some sunflower seed butter that will serve as a substitute!

    I'm going to be adding these to my "to-bake" list!

  2. Mmmm, I loooove blondies. Sweets in general are my weakness. I think I'm going to go to my freezer and take out a fudge popsicle right now! Your blondies turned out really great!
