carrot cake balls

Two recipes? In one week? WILD. I baked two dishes this weekend; the salted caramel apple pie (with bacon!) for Saturday night's party, and these little lovelies for the family birthday party. These were uh-mazing. And this time, I used a homemade cake instead of one from a box.

Carrot cake balls

3/4 stick butter, melted
3/4 cup brown sugar
2 eggs
1 cup whole wheat flour
1 t baking soda
1 t baking powder
1 t cinnamon
1/2 t salt
1 cup fresh grated carrots
handful raisins
2 containers cream cheese frosting

Preheat oven to 350 degrees and butter and flour an 8x8 pan. Mix butter and brown sugar together in mixer, and add in the eggs one at a time. Take all of the dry ingredients and mix together in another bowl. Slowly add the dry mixture into the mixer until completely mixed. Fold in the carrots and raisins and pour into prepared pan. Bake for 30-40 minutes, until a toothpick comes out clean. Let cool completely.
Once cooled, crumble cake into a large bowl and add in one container of cream cheese frosting. Get messy! Mix everything together by hand until everything is ooey gooey. Roll into small balls by hand, or use a small ice cream scooper. Place balls onto cookie sheet and refrigerate over night.

Take second container of cream cheese frosting and dip half of the ball in. I swooshed mine around a little in the frosting to get them coated. You can also coat them in melted white chocolate, but I don't really like white chocolate. Place the balls on a parchment paper-lined cookie sheet, pop them back into the fridge for a few hours and you're all set!
Deeeeeelish. You can also get fancy with these and make a homemade cream cheese frosting, but since I was baking two desserts at once, I opted to cheat a little. But it still tasted good, that's for sure.

  1. umm..YUMMM! I have seen a lot of cake pops lately, but haven't taken the plunge to try them yet. I didn't realize they were so easy. For some reason I thought that you had to shape the unbaked dough into balls and hope they bake that way. haha. Glad to see that they are way easier than I expected.

  9. I made the red velvet ones last week and loved them! Although I think I'll like these even better. More cream cheese = perfection.
