tomato soup

The fashion show last night was absolutely unreal. I'm so glad Bianca and I got to go, and I can't wait to share my photos with you :)

In the mean time...I made a delicious tomato soup last week after getting a terrible cold. I was sneezing every five seconds it felt like, and I just wanted something warm to make me feel...well...better. So I adapted this recipe from Ina Garden and created a delicious concoction.

Creamy tomato soup

3 T olive oil
2 chopped onions
2 carrots, peeled and chopped
3 cloves minced garlic
5 or 6 plum tomatoes, peeled and chopped
1 1/2 t sugar
1/4 cup chopped basil
3 cups chicken stock
1 T kosher salt
2 t fresh cracked pepper
3/4 cup heavy cream

Heat olive oil in a heavy pot over medium-low heat. Add onions and carrots and saute for about 10 minutes. Add in garlic and cook for about a minute (don't let it burn!). Add in the tomatoes, sugar, basil, chicken stock, salt and pepper. Stir and bring to a boil. Lower the heat and let simmer uncovered for 30-40 minutes. Stir in the cream, and then process in the blender. If you're lucky enough to have a food mill or an immersion blender, use that. My regular blender worked just fine though. You can strain out the lumps and the bumps, but I liked having them in there. It made it more rustic for me. Reheat the soup over low heat and serve!
Do yourself a favor and serve this with a grilled cheese. You will not be disappointed.
Or a glass of wine...or both...

  1. That is so funny, because I came down with a head cold Sunday evening and made a batch of yummy soup last night for dinner. Soup always sounds good when your head is all stuffy!

  2. oh! wonderful!! i love recipes... I try them sometimes. But I've always wanted to eat tomato soup and grilled cheese. I think this weekend calls for a somewhat nice and warm light lunch. thanks for sharing
