chocolate pudding icebox cake

That's right. Award. Winning.


I won third place in my office's dessert competition. I was beat out by caramel pecan brownies and oreo brownies.

This stuff's legit.

Chocolate Pudding Icebox Cake (from Martha Stewart)

3 3/4 cup milk
1 1/2 cup half and half
1 1/4 cup sugar
1/2 t coarse salt
1 T pure vanilla extract
8 large egg yolks
1/3 cup unsweetened cocoa powder
4 1/2 T cornstarch
9 ounces bittersweet chocolate, chopped
3 T cold, unsalted butter, chopped in squares
1 package graham crackers
3/4 cup heavy cream
2 T confectioners sugar

Combine 3 cups milk, half and half, 1/2 cup plus 2 T sugar, salt and vanilla in a large saucepan. Bring to a simmer over medium heat.

In a large, heat-proof bowl, whisk egg yolks and combine with the remaining 1/2 and 2 T of sugar, cocoa, cornstarch and remaining 3/4 cup milk. Whisking constantly, gradually add in the hot milk mixture. Set a fine mesh sieve over the sauce pan and strain the mixture back into the pan. Bring to a boil over medium heat, whisking constantly. Continue whisking until the mixture thickens to a pudding-like consistency.

Transfer the mixture to an electric mixer with the paddle attachment. Add the chopped chocolate and beat on medium speed until the chocolate has melted and the mixture has cooled slightly, about 3 minutes. Beat in the butter, a little at a time, and continue beating until the mixture has cooled (about 10 minutes).
Layer the bottom of an 8x8 inch pan with graham crackers, breaking some so they're snug. Spoon about 1/3 of the pudding on top of the graham crackers, and then place another layer of graham crackers over them. Repeat so there are three layers of graham cracker and pudding.
Transfer to refrigerate, and let cool for at least two hours or overnight.

In the electric mixer fitted with the whisk attachment, whisk together the heavy cream and confectioners sugar until medium peaks are formed. Spread over the top of the pudding immediately before serving.
