classic gingerbread cookies

This weekend, I also hosted my Stella & Dot trunk show. Overall, it was a huge success, and I'm so happy I had the opportunity to host!

Did I take any pictures? No, of course not. I always forget to take pictures at prime times. But I did make some delicious gingerbread cookies inspired by Martha Stewart. No pictures of those either, but here's a picture of hers...
Gingerbread Cookies

6 cups all purpose flour, plus more for workspace
1 t baking soda
1/2 baking powder
1 cup unsalted butter
1 cup packed dark brown sugar
4 t ginger
4 t cinnamon
1 1/2 t all spice
1 t finely ground pepper
1 1/2 coarse ground salt
2 large eggs
1 cup molasses

Sift together flour, baking soda and baking powder in a bowl and set aside.

Put butter and brown sugar into a mixing bowl and mix on medium speed with the paddle attachment until fluffy. Mix in the spices and salt, then the eggs and the molasses. Reduce speed to low, and slowly add in the flour mixture. Mix until just combined. Divide dough into thirds, wrap in plastic wrap and refrigerate until cold (about an hour).

Preheat oven to 350 degrees. Roll out dough on floured work surface until about 1/4 inch thick. Cut into even circles using the top of a water glass. Grab the excess and roll it back out until you've used it all. Repeat with the other two thirds of dough. Space cookies 2 inches apart on a cookie sheet lined with parchment paper, and refrigerate for about 15 minutes.

Bake cookies for about 12 minutes. Let cool on wire rack. Enjoy!


  1. Oh I haven't made gingerbread cookies in ages. I think it was 2006 and in the middle of the night I wanted to make gingerbread men. Needless to say, I was up all night. But I LOVED them. Haha.

  2. Ahh I just made these exact Martha gingerbread snowflakes too and they came out great! I haven't done a post on them yet, but I was super pleased with how flavorful they were! Great minds think alike :)
