creamy avocado pasta

So this turned out to be a real hit with folks over on Twitter and Instagram! I thought about saving this to post next week, but so many people demanded for the recipe that I figured I'll post it today.

Here you have it.

Creamy Avocado Pasta (adapted from Oh She Glows)

2 or 3 cloves of garlic
2 T lemon juice
2 T olive oil
1 medium-sized avocado, pitted
1/2 cup basil
salt
8 oz your choice of pasta

Boil salted water and cook pasta to al dente.
While the pasta is cooking, combine the garlic, lemon juice and olive oil in a food processor until smooth. Then add in the avocado, basil and salt and blend until smooth.
Once pasta is finished cooking, drain and combine pasta with sauce. Enjoy.
This is probably one of the best things I've ever made. I love avocado, so I knew it was going to be a real hit. The lemon adds a nice tangy note while the basil makes it taste super fresh. This is the perfect quick fix meal, since you can make the sauce while the pasta's cooking. Perfection. For reals.
