peanut butter yogurt pie

Two recipes. One week. Hold onto your hats kids.

Peanut Butter Yogurt Pie (seen here)

10 oreo cookies
3 T melted butter
32 oz vanilla greek yogurt
3/4 cup smooth peanut butter

Preheat oven to 350 degrees. In a food processor (or in a plastic bag with a hammer) crumble oreos. Combine with melted butter until cookies are coated. Pat down into an 8-inch pie dish and bake for about 10-15 minutes. Set aside and let cool.
Combine greek yogurt with peanut butter and mix until smooth.
Pour into the pie dish and allow to refrigerate overnight to let set. Try not to eat your hand off while staring at it every time you open your fridge.
I made this for the Super Bowl and it was so damn delicious. It's the perfect cool dish, and I can't wait to make it more in the summertime.

  2. This reminds me of my favorite summertime snack: half low fat vanilla yogurt, half peanut butter and cinnamon to taste. Dip apples (or whatever) and it's perfection!
