tortilla avocado soup

Trader Joe's really has been serving me well with the recipes lately. I adapted this one a little bit to give it a little more shtuff in it, if you know what I mean. But this recipe makes a huge batch of soup; plenty for dinner and a few lunches. Plus, it comes together in a flash. My favorite.

Tortilla avocado soup (adapted from here)

1 container TJ's creamy corn and roasted red pepper soup
1 can TJ's organic tomatoes, diced & fire roasted with organic green chiles
1 1/2 teaspoons taco seasoning mix
1 can of corn
handful of blue corn tortilla chips, crumbled
avocado (1/2 per serving)

Combine soup, tomatoes, taco seasoning and corn in a large pot, and cook over medium heat until heated through. Serve into bowls, and add a handful of crumbled chips over the top and some sliced avocado.

I'm pretty sure this recipe is impossible to screw up. I also used a whole avocado on my serving since I'm obsessed with it.

  2. the easiest recipe i know that my husband loves is this:

    1 can of black beans
    1 can of rotel
    1 bag of boil-in-a-bag rice

    boil the rice (this takes 5 min). heat the beans and rotel together. pour the beans over the rice. garnish with sourcream.

    voila.
