crabmeat risotto

I've never made risotto before, so there was a strong chance that this could totally flop. But oh my god you guys. This recipe. It's so easy. SO EASY. It takes a little while, but it's totally worth it. I just set up my computer next to the stove and read blogs while I stirred. Awesome.

Crabmeat Risotto (adapted from here)

1 cup arborio rice
1 T olive oil
1 shallot, minced
2 cloves garlic, minced
1/4 cup dry white wine
4 cups seafood stock
1 can lump crab meat
1/4 cup grated parmesan cheese
1/2 t sea salt
Heat the olive oil in a large pot over medium heat. Add the shallot and garlic and saute until soft and fragrant. Add in the rice and toss so each grain is covered in oil. Add in the white wine and stir until it is all absorbed.

Add in the stock about 1/2 cup at a time and stir until all of it has been absorbed. Continue until you have incorporated all 4 cups. It took me about 30 minutes. But makes sure all of the stock is absorbed before adding more. This will make your risotto super creamy.

Add in the lump crab meat, add in the cheese and salt to taste. Enjoy!

  3. Oh dearie, Ristotto is my favorite food ever. I try to stay away from it because I'm an addict and it can get ugly. What am I supposed to do? Ignore your blog? I think not.
