tomato cream sauce pasta + shrimp

Guys, this post is a big deal for me. This is the first recipe where I didn't follow the directions for a recipe to a T. And it still turned out delicious. Hallelujah. It's like I'm turning into a real cook or something!

Tomato cream sauce pasta + shrimp (adapted from here)

1 can tomatoes
2 cloves garlic, minced
2 T heavy whipping cream
2 T olive oil
8 oz pasta of your choice (I like linguine)
salt and pepper to taste
2 handfuls of pre-cooked frozen shrimp (peeled, deveined, tails off)
fresh grated parmesan
Set out about two handfuls of shrimp to thaw in a bowl. Cook the pasta in boiling salted water, drain and set aside. Heat olive oil in a skillet over medium-high heat, and then add in the minced garlic. Cook for about 3 minutes, or until soft and fragrant. Add the tomatoes and the heavy cream to the garlic and heat through. Add in the shrimp, and then salt and pepper to taste. Allow to cook for about five minutes, then add in the pasta and mix to combine.
Top with freshly grated parmesan cheese.

Love life. This came together in about 20 minutes, and was delicious to boot. It's definitely going to become a staple in this house.

  1. FEED ME! lol. but this looks amazing. AJ wouldn't eat it though, he's a little bitch about cream yet he loves chicken broccoli casserole, which if you as me, is freaking disgusting.

  4. Perfect timing! I just bought a seafood mix (shrimp, scallops, calamari) from TJ's and was planning on tossing some in a pasta. And now you've gone and taken all of the planning out of it for me. Thanks for being awesome!
