roasted garlic flatbread pizza

Guys. This pizza. It's just all kinds of amazing. And easy as pie. Pizza pie ;)

Roasted garlic flatbread pizza (adapted from here)

1 medium-to-large flatbread
1/2 head of garlic
1 beefsteak tomato, sliced thin
sliced fresh mozzarella
1/4 cup ricotta cheese
salt, pepper and dried basil to taste

Preheat your oven to 350 degrees. Cut a head of garlic in half, and drizzle it with olive oil and sprinkle salt and pepper. Wrap it in tin foil and stick it in the oven for about 45 minutes to an hour. You want this stuff soft.

Once the garlic's ready, pop the cloves out and spread it over your flatbread. Add on your sliced tomatoes and mozzarella. Smooth some ricotta cheese into empty slots. Sprinkle on some salt, pepper and dried basil. Place on a cookie sheet or pizza tray and cook in the oven for about 5 to 10 minutes, or until the cheese has melted.

Slice and enjoy :)
Easy and delicious. Seriously two of my favorite things.
