caprese pasta salad + creamy balsamic vinaigrette

Summers are made for pasta salads. They're cool and once you make a big batch it lasts for days. Lunches? Set. Too hot when you get home from work? PASTA SALAD.

Caprese salads are my absolute favorite, so I thought why not infuse the two of them? And salads are not complete without dressing, and this creamy vinaigrette just seemed divine.

Get. Ready.

Caprese Pasta Salad
1 lb pasta of your choice (I used farfalle)
1 medium-sized package of cherry tomatoes, halved
1 handful of basil, julienned
small mozzarella balls (as much as your heart desires)

Cook pasta until al dente; drain and cool. Take the tomatoes, basil and mozzarella and combine in a big bowl.
Creamy Balsamic Vinaigrette (adapted from here)
4 cloves garlic
3 T mayonnaise
juice of 1 lemon
1 T dijon mustard
1 T sugar
1 1/2 t salt
1/2 cup balsamic vinegar
3/4 cup olive oil
Microplane garlic, and combine with maynnaise, lemon juice, mustard, sugar and salt with whisk. Whisk in the balsamic vinegar until well combined, then slowly whisk in the olive oil.
Drizzle vinaigrette onto salad and enjoy!

  4. Um, that looks ridiculously amazing. I tried a caprese pasta salad once, but I did just plain ol' balsalmic and it was awful. Creamy looks like the way to go!
