recipe: strawberry yogurt banana bread

Somehow, we keep letting our bananas just get too ripe. I think it might be a secret plot by Craig to make me bake more breads. But this time, I also had some strawberries on hand and, well, it's not summer without strawberries. And then I thought maybe that might be too sweet. Enter the yogurt:
Strawberry yogurt banana bread

1 3/4 cup flour
1 t baking powder
1/2 t baking soda
1/2 t salt
1/2 cup light brown sugar
4 large ripe bananas
1 t vanilla extract
2 eggs
1/2 cup plain yogurt (any style)
1 cup strawberries, sliced
Preheat your oven to 350 degrees. Add flour, baking powder, baking soda and salt into a bowl, mix and set aside. Add brown sugar, bananas, vanilla extract, eggs, yogurt and strawberries into another bowl and mix until bananas are mushed together (technical, I know). Incorporate the dry ingredients into the wet in thirds, making sure the dry ingredients are fully mixed into the wet before adding more. Pour into a greased loaf pan, and bake for about an hour, or until the top is golden brown and a toothpick comes out clean.

  1. Im definitely trying thing. We are banana bread fans and I have a bunch of over ripe little babies staring at me right now. I bet this would be good with peaches too.

  8. Alright so I'm baking this as we speak, except I left out the vanilla extract and just used vanilla yogurt instead, and swapped brown sugar for white sugar. Lets see how this goes!
