recipe: summer salad

The summer's been winding down, and I'm looking forward to fall, but let's be real: it's still hot out there. So most nights, I have no desire to eat anything warm. And I have even less desire to COOK anything hot. So salads it is.

But salads can get boring. Not this one, though. Not. This. One.

Arugula, watermelon and feta salad

for the vinaigrette
juice of 1 orange
juice of 1 lemon
1 large shallot, minced
1 T honey
1/2 cup olive oil
a good crack of fresh sea salt
a good crack of fresh ground pepper

Whisk together the orange juice, lemon juice, shallot, honey, salt and pepper together in a medium bowl. Slowly whisk in the olive oil. If you're not using it that night, stick it in an air-tight container in your fridge. Make sure you whisk before use.

for the salad
6 cups (or one bag) of fresh arugula, washed and dried
about 1/4 a small watermelon, cubed without the rind
12 oz good block feta, cubed
handful of fresh mint leaves, julienned

Add all of your ingredients into a large bowl. You can either toss the whole salad in the vinaigrette, or add it to individual servings. Enjoy!
The arugula has a great, peppery flavor, while the watermelon feels crisp. And the mint? Adds just the right kind of freshness I crave in a salad. Oh, and it's not a salad without cheese. No way. The feta just adds the perfect saltiness.

Enjoy with our without an aranciata San Pellegrino. But I highly suggest with. It's quite delightful.
