recipe: apple pie

Thanksgiving is tomorrow. How did this happen?! I've been thinking a lot about what I want to make, and I decided it was high time for a classic apple pie.

Right?
Apple Pie

2 pie crusts, thawed to room temperature
2 lbs granny smith apples
juice and zest of 1 lemon
3/4 cup of sugar
2 T all-purpose flour
1/4 t salt
1 t cinnamon
1/4 t ground nutmeg
1/4 t all spice
1 egg white, lightly beaten

Place a cookie sheet in your oven on the bottom rack and heat to 500 degrees. Flour and roll out one of the pie crusts into the bottom of your pie plate and let some of the edges curl off the ends; you can toss it in the fridge for a few minutes. Peel, core and slice your apples, then mix with the juice and zest of the lemon. Combine your sugar, flour, salt, cinnamon, nutmeg and all spice in a bowl, then combine with your apple slices. Add in your apples and kind of heap them in the middle. Then you can either roll out the other pie crust on top and cut a few slits into the top or create a lattice top. Up to you. Brush your egg white onto the crust, then sprinkle with a bit of sugar.

Lower your oven to 425 degrees and bake your pie on the cookie sheet for about 25 minutes, or until the top is golden brown. Then lower the temperature to 375 degrees and bake for 30-35 more minutes. Allow to cool a bit, then enjoy!

  2. I can't believe it's Thanksgiving already either!
    And as far as I'm concerned, Thanksgiving just isn't Thanksgiving without apple pie! :)
