recipe: pumpkin cupcakes

Cupcakes. They're totally my go-to when I can't think of something to bake. Most of the time, I have all of the ingredients on hand to make them, and they're just so fun. And easy. And hand-held. Nothin' better.

And these cupcakes, well, these guys scream fall/winter to me. They make me think of holidays, being cozy. All that good shiz.
Pumpkin Cupcakes

2 cups all-purpose flour
1 t baking soda
1 t baking powder
1 t salt
1 t cinnamon
1 t ginger
1/4 t nutmeg
1/4 t allspice
1 cup packed light brown sugar
1 cup sugar
2 sticks butter, melted
4 eggs
1 can pumpkin puree

Preheat your oven to 350 degrees and line your cupcake pan with paper liners. This recipe makes 18, so get two pans ready if you have them. I don't, so I just did two separate batches. In a medium bowl, mix together your flour, baking soda, baking powder, salt and spices and set aside. In a large bowl, mix together the sugars, butter and eggs until smooth. Slowly add in your dry ingredients, whisking until smooth. Then add in your pumpkin puree. Mix.

Add your batter into your lined pan, filling each liner about half way. Bake for about 20-25 minutes or until a toothpick comes out smooth. Top with your favorite cream cheese frosting, and enjoy!

  1. i have never tried pumpkin anything (we don't really eat it much in england) but these sound amazing, so i might just have to make a change to that ASAP! :) xx
