a recipe: cookies 'n' cream cookies

Cookies inside of cookies. There's nothing better, right? If you haven't done it yet, you probably should. Double the cookies in one bite. These cookies are remarkably light for the amount of delicious in them.
Cookies 'n' Cream Cookies (adapted from here)

2 cups all purpose flour
1 T cornstarch
1 1/2 t baking powder
1/2 t salt
4 oz softened cream cheese
1/2 cup softened butter
3/4 cup sugar
1 egg
1 t vanilla extract
1 sleeve of candy cane Joe Joes (from Trader Joe's), crushed in a food processer

Combine your flour, cornstarch, baking powder and salt together in a bowl and set aside. Beat cream cheese in a stand mixer until softened, then cream in the butter and the sugar. Mix in the egg and the vanilla until well incorporated, then add in the dry ingredients until just combined. Fold in the Joe Joes and set in the refrigerator for 30 minutes.

Preheat your oven to 350 degrees, and drop the dough in rounded tablespoons onto a prepared baking sheet. Bake for about 12 minutes until the cookies are puffed and slightly brown on the edge. They'll feel really soft, but don't worry, they'll harden up!
