recipe: stuffed mushrooms

So I must disclose something. I didn't really make these. Craig did. I got a litttleeee too happy during some day drinking escapades and really wasn't in any condition to be anywhere near the stove. So Craig made these for me. But they were my idea!
Stuffed Mushrooms

1.5ish pounds button mushrooms
12 oz sausage (I used chicken sausage)
6 oz cream cheese
salt, pepper to flavor
handful of chopped scallions

Preheat your oven to 350 degrees. Hollow out your mushrooms and line them on a foil-lined baking sheet, hollowed end up. Cut the casing off of your sausage and cook them over medium-high heat in a skillet until they're cooked through. Don't drain the fat! Add everything from your skillet into a bowl with the cream cheese, salt, pepper and scallions. Let cool slightly, then stuff your mushrooms. Bake for about 30-35 minutes or until they're good and tender.


  1. ok i love mushrooms but always have problems incorporating them into meals - I love this idea because then they can be used as little snacks or appetizers. I'll have to try this out!
