recipe: raspberry crumble bars

Crumbles are seriously one of my favorite things to make. They're easy and delicious. What's not to love? But recently I've been adapting this recipe to make some delightful crumble bars. Delicious and portable. The greatest.

2 sticks unsalted butter, room temperature
3/4 cup sugar
1 t vanilla extract
2 1/3 cups flour
1/2 t salt
12 oz raspberry jam (i use organic)
2/3 cup granola (i use the vanilla granola in the bulk section of whole foods)

Preheat your oven to 350 degrees. In a stand mixer fitted with the paddle attachment, combine the butter and sugar on medium speed until just combined. While on low, add in the vanilla extract. Sift together the flour and salt, then slowly add that into your butter mixture until it comes together in a ball. Take 2/3 of your dough and pat it into the bottom of an 8x8 pan, making sure to bring it up about 1/4" up the sides of the pan. Spread your jam evenly across the dough. Combine your remaining dough with your granola and sprinkle that across the top. Bake for 45 minutes or until the top is golden. Enjoy warm or cold.
