samosa lettuce wraps

Since going back to a mostly paleo lifestyle, I've felt significantly better about myself. Am I any thinner? I don't really know. But I don't feel as bloated anymore and my energy levels are up up up. Hooray!

For dinner this week, I whipped up a variation of the deconstructed samosas from Nom Nom Paleo. But with a little twist.

And by twist I mean I couldn't find garam masala at the grocery store so I had to make some substitutions.
Anyway, on with the recipe!

Samosa lettuce wraps

2 T ghee
1 large onion, minced
3 cloves garlic, minced
2 T ginger, minced
1 t harissa (or, you know, some spicy spice)
2 lb ground beef
1/2 tumeric
2 1/2 t salt
1/2 cup coconut milk
1 T chili powder
juice of 1/2 lemon
butter lettuce leaves

In a large skillet, melt your ghee over medium heat, and once it's all good and melty, add in the onions. Sautee those for about 10 minutes, or until they're translucent, then add in the garlic, ginger and harissa and cook those until they smell yummy. Then crumble in your beef and cook that ish up until you don't see any more pink. Add in your tumeric, salt, coconut milk, chili powder and lemon juice and get that skillet simmering. Turn your heat down to medium low, cover that up and let it cook for 20 minutes. Go ahead and stir it occasionally, and if the liquid isn't evaporated after the 20 minutes, let it cook for another 5. Add some to your lettuce leaves, wrap 'em up and enjoy.

I've been eating this for lunch all week. I am obsessed.

  2. Ooh I need to make these! And I hear you about needing to get back on the Paleo bandwagon because I've been kind of off the rails with my eating this summer. And it's only further confirmed to me that I really look and feel my best when I'm eating 80-90% Paleo :) Have a good weekend lady! xoxo
