a recipe post: apple pumpkin muffins

It's not fall without pumpkin, amirite? These are indeed the muffins I forgot the sugar for. This time, made with sugar. You're welcome.

I modified this recipe (peep that blog while you're there, it's super amazing!), and came up with these! Delightful and perfect for fall.
Pumpkin apple muffins (makes 18)

for the muffins
1 cup all purpose flour
1 1/4 cup whole wheat flour
1 t baking powder
1/2 t baking soda
1 cup sugar
1 t salt
2 1/2 t pumpkin pie spice
2 medium-sized apples, peeled, cored + chopped
15 oz canned pumpkin puree
1/2 cup butter, softened
3 eggs

for the streusel
1/3 cup flour
1/2 cup cold butter
1/4 cup sugar
1 t cinnamon

Preheat your oven to 350 degrees. Spray your muffin tin with cooking spray, unless you don't have any in which case you should use muffin liners. But try to use cooking spray. In a large bowl, combine all of your dry ingredients (flour through salt); sift it if your feeling fancy. In another bowl, mix all of your wet ingredients (apples through eggs), but don't overmix! Add your dry ingredients into your wet ingredients, folding until just combined. Fill your muffin wells about 3/4 of the way with batter. Add all your streusel ingredients into a food processor and pulse until you have pea-sized balls. Sprinkle that on top of your muffins. Bake for about 25 minutes, or until a toothpick comes out clean. Allow to cool and enjoy!
