a recipe post: strawberry basil pie

it's strawberry season, so i've been trying to find new ways to use them. this pie is IDEAL. and delicious.

2 pre-made pie crusts (or homemade if you're fancy)
2 lbs strawberries, hulled and sliced
1/2 cup basil, chopped
zest of 1 lemon
juice of 1/2 lemon
3 T sugar
2 T cornstarch
1 egg, beaten

preheat your oven to 350 degrees. in a large bowl, combine the strawberries, basil, lemon zest + juice, sugar and cornstarch. lay out one of the pie crusts into a 9-inch pie dish and leave a little overhang. add in your strawberry mixture, then top with the other pie crust. you can create a lattice top, like i did, or just add it on like i did with my meyer lemon pie. whatever you decide on, brush the top with your egg wash, and sprinkle on a little more sugar. bake for 45 minutes, and allow to cool for 20 minutes. serve it warm or cooled, whatever suits your fancy!
