a recipe post: greek yogurt banana bread

there's something so comforting about banana bread. it's so easy to pull together, and just has such a homey feel. but i was inspired by chobani's #madewithchobani campaign to make banana bread with a twist: replacing butter or oil with greek yogurt!
Blueberry Banana Bread

1 1/2 cup all-purpose flour
1 1/2 t baking soda
1 t salt
2 eggs, lightly beaten
3 bananas, mashed
1/3 cup sugar
1/2 cup plain greek yogurt

preheat your oven to 350 degrees, and prepare a loaf pan with cooking spray. in a large bowl, combine the flour, baking soda and salt. in another bowl, combine the eggs, bananas, sugar and greek yogurt. add your wet ingredients into the dry.

so here's where you can get crazy. add some chopped nuts or chocolate, or blueberries if your mom gave you two pounds of them a few weeks back and you still had some left. whatever. mix those in, but be careful not to overmix the batter.

bake your bread for 35-40 minutes or until a toothpick comes out clean. allow to cool and enjoy!
